Not Your Regular Fried Rice🍲

Pineapple fried rice is a quick stir-fry with Thai-inspired ingredients This healthy pineapple fried rice is a lovely blend of sweet and savory flavors. There many different recipes one can get to prepare this delicacy and here is one of the easiest. Just give it a try at home.

Ingredients

🍍3cups precooked rice

🍍1/3cup diced green pepper

🍍1/3cup diced carrot

🍍1cup diced pineapple

🍍1tbs minced ginger

🍍1tsp minced garlic

🍍1/2cup diced onions

🍍1/2cup chopped scallions

🍍1/3cup of oil

🍍9 jumbo raw shrimps(optional)

🍍2tsp fish sauce (optional)

🍍1tsp white pepper

🍍1tsp or more salt

🍍1/2 tbs curry powder

🍍seasoning cube

🍍Egg

Steps

β€’ Heat up oil on a moderate heat,add shrimps,garlic and ginger.

β€’ Sprinkle with a dash of salt to taste and fry for 3mins

β€’ Remove the shrimps and add onions. fry for about a minute

β€’ Create a space on the side of the pan and crack in the egg, scramble and mix with onions

β€’ Add in green pepper,carrot and half of the scallions and stir(work fast with a high heat at this point so it fries the vegables and rice instead of sauteing)

β€’ Add in the curry powder, white pepper and seasoning cube,stir for about a minute or 2

β€’ Add in the rice,pineapple and shrimps and stir regularly

β€’ Add in 2tsp of fish sauce(optional)

β€’ Add in the remaining half of the scallions,taste for salt. Add more salt if necessary.

β€’ Turn off stove, ready to serve.
